Okay, I personally think these two beauties look so much alike! Aside from the fact that they are both "Sara(h)'s" they even have a relatively similar personality! It's kind of crazy. Well... what do you think? Look-a-likes or no?

Rachael Ray's Soup- Create Your Own


This is a soup from Rachael Ray. It is delicious and you can basically make it your own! Here is what I used tonight:

1lb ground chicken
1/2 lean turkey Polish kielbasa
1/2 onion, finely chopped
1 garlic clove, minced
4 baby portabello mushrooms, chopped
32 oz chicken stock
2 red skin potatoes washed and chopped (I used 2 handfuls of baby fingerling which you don't have to chop)
15 oz diced tomatoes
1/2 bell pepper, chopped
1 bulk carrot, chopped
15 oz mild chili pinto beans (use your favorite)
2 cups fresh spinach, chopped
1/2 teaspoon oregeno
1/2 teaspoon basil
1 bay leave
tabasco to taste
pepper jack cheese (optional to sprinkle on top at the end- I didn't do this tonight, but it adds a nice kick)

***substitute any ingredients you do not like for your favorites! This a great way to use up some pantry items! ***

1. Cook ground chicken in a little bit of olive oil over medium heat. Remove to a plate.
2. Add in onions and garlic until tender. Then, add in kielbasa until slightly browned.
3. Add another tablespoon of olive oil and cook mushrooms until tender.
4. Add chicken broth and potatoes, cook over medium high heat for 10 minutes.
5. Add remaining ingredients into pot as well as the reserved cooked ground chicken.
6. Simmer for as long as you have! This soup is fantastic after only 15 minutes and even better the next day!

Place Value- First Grade

My students needed a more concrete way to understand place value... here is the activity I used and it worked like a charm! via: The First Grade Parade Blog

Directions included in the blog site above. The objective is students must trade in groups of ten for a tens stick.


Differentiate it: White out the numbers on the snowman and make a copy. Add in higher numbers like 12, 15, 17 or even 22. Challenge your higher students by having them figure out a more efficient way to figure out how many tens sticks and ones cubes!

Meet CHARLIE!!!

This past August our dog Lucy passed away due to complications with a surgery. It was totally unexpected and has been VERY difficult to say the least! I still miss her everyday! BUT, this is Charlie, Lucy's 3 month old cousin! How adorable and fluffy is he?! He can't replace Lucy, but it is comforting to know that he is related to her.

Easy Healthy Chicken Piccata

4 chicken cutlets
10 ounces sliced mushrooms
3 garlic cloves, minced
2T fresh lemon juice
1/2 cup white wine
1/4 cup brined capers
1/4 cup fresh parsley, chopped
1 cup chicken broth
1T flour
Olive oil for cooking



In a skillet over medium to medium high heat add 1T olive oil. Add in chicken. Brown about one minute on each side. Remove.

Add in mushrooms to pan with another tablespoon of oil if needed. Allow to cook for a few minutes until tender. Remove.

Add garlic and wine. Reduce by half. Stir in lemon juice, broth, and flour. Allow to slightly thicken.

Then add back in chicken, mushrooms, capers and parsley until warmed through.

Serve over 1/3 to 1/2 cup noodles. I ate it with unlimited asparagus :)
